Kalkan Inspired BBQ Feast by Harry France & Madison Kelly

Harry and Madison have been taking culinary trips all around the world from their kitchen. So far they've been to Thailand, Jamaica, Vietnam, Bangledesh and more. This time it's Turkey with a Kalkan themed BBQ. These recipes are quick and easy to prepare with delicious results. Enjoy with a Ancyra Kavaklidere Blush or an ice cold Efes.

SHISH MARINADE
400g Greek Yoghurt
4 Cloves of Garlic grated
½ Onion grated
1 tbsp Paprika
1 tsp Ground Cumin
1 tsp Ground Coriander
1 Tomato grated
1 tsp of Salt
1 tsp of Pepper

Whisk all ingredients together, marinade diced meat for 24 hours. Skewer and BBQ!

LAMB KOFTA
500g Minced Lamb
1 tbsp Paprika
1 tsp Ground Cumin
1 tsp Coriander
½ tsp Sumac
½ tsp Salt
½ tsp Pepper
½ Ground Onion
½ small Diced Onion
3 Garlic Grated
Small handful of chopped Parsley

Use minced lamb with a fair amount of fat. Mix all ingredients together, marinade for 24 hours. Squeeze onto skewer and BBQ.

CACIK
1 Garlic Clove grated
300g Greek Yoghurt
1/3 Cucumber grated

Stir all ingredients together with a pinch of salt and serve.

VEG SHISH
Aubergine
Courgette
Red Onion
Mixed Peppers
Olive Oil
Salt + Pepper
Sumac
Rosemary – chopped.

Dice all vegetables into large cubes. Marinade for 24 hours with rosemary, salt and pepper, olive oil and sumac.

HUMMUS
1 tin of Chickpeas
100g Tahini
2 Garlic Cloves
½ Lemon Juice
½ tsp of Ground Cumin
½ tsp Salt
¼ tsp of Ground Coriander

Using a food processor blend all ingredients together. Serve with a sprinkling of paprika and olive oil.
