RECIPES FROM OUR CHEFS


Ingredients:
300g Self Raising Flour | 1tsp Baking Powder | 125g Caster Sugar | 1 Egg | 2tbsp Sunflower or Veg Oil | 275ml Milk | 125g Fresh Raspberries | 150g White Chocolate (chopped) | 90g Crunchy Oat Cereal (granola)

Directions:
1. Preheat oven to 200°C.
2. Sieve the flour, baking powder, salt and sugar into a large mixing bowl.
3. Crack the egg into a bowl and whisk together with oil until light and foamy. Add the milk and whisk again until frothy.
4. Fold the egg mix into the flour mix (it will be lumpy but fold until no flour can be seen).
5. Fold in the raspberries and white chocolate.
6. Fill 12 muffin cases 3/4 full and sprinkle over the oat cereal.
7. Bake for 25mins in a fan oven (longer in a normal oven).
8. Rest on a cooling rack and enjoy!

You can use frozen berries but they need to be thawed before adding them. Try other fruits like blueberries, strawberries or blackberries. You could also add nuts, dried fruit or chocolate chips!
