Cider Recipe
1 & ½ litre cidre
400mL mix of clementine & apple juice
60g dark brown sugar
1 zest from a whole orange
7g winter spice mix
Splash of Rum to taste

Heat Cider & juice mix in large Saucepan
Stir in dark brown sugar, winter spice mix and orange zest
Simmer until heated through
Add a splash of rum to taste

Winter Spice Mix
25g cloves
40g star anise
20g ground cinnamon
30g caraway seeds
50g Szechuan pepper seeds
50g coriander seeds
10g ground white pepper
25g ground black pepper
10g ground nutmeg

Breakdown in spice grinder or using a mortar and pestle.
